I really feel like something chocolatey, rich, and sweet, like Ferrero Rocher. The store-bought one is not vegan, so let’s vegan it! They are still sweet but without any added sugar or artificial flavor. They are also no-bake and easy to make as long as you got a food processor to help.
These Ferrero Rocher balls are not only vegan, but also healthier (aka more nutritious). They are no egg, no dairy-product, and no common wheat flour involved. Another fun fact: they are sweet without any added sugar! How? THE naturally-sweet, my beloved ingredient: dates.

Place all the filling ingredients EXCEPT the whole hazelnuts into a food processor and process until smooth. Stop and scrape down the sides 1 or 2 times if needed.
Scoop out the mixture into a freezer-safe bowl or container. Place it in the freezer for about 30 - 40 minutes until it gets solid. Take out the stir the mixture every 15 - 20 minutes to let the mixture solidify evenly.
Remove the mixture from the freezer. Use a melon baller or a small spoon to scoop the mixture, insert a whole hazelnut in the middle, and shape it into a little ball. Place the little ball onto a lined baking sheet or tray. Repeat to finish them all and return them to the freezer. The mixture is very heat-sensitive, so do your best to move fast.
To make the hazelnut coating:
Add all hazelnuts to a food processor and use "pause" to chop them to ideal fineness. Transfer the mixture to a small bowl.
Remove the chocolate balls from the freezer. Roll each ball in the chopped hazelnut and place them back to the baking sheet. Return to the freezer for another 20 minutes.
To make the chocolate coating: Melt the cocoa butter by using a double boiler (bain-marie). Once the cocoa butter is melted, mix in the cacao powder and salt to incorporate until smooth. Remove from the heat.
Take out the chocolate balls in the freezer. Use a small fork or skewer to pick into a ball and dip them into the chocolate coating to get coated evenly. Let the balls sit for about 30 seconds and enjoy them directly. If you find it too soft, return to the freezer for a while to get more solid.
